Vegan Chocolate Frosting

Frosts one cake, up to two layers.


Ingredients:

½ cup vegan margarine
2 cups vegan powdered sugar*
1 tablespoon vanilla extract
2 tablespoons soymilk
⅓ cup cocoa powder (or more)
small pinch of salt

*If you want this to be strictly vegan, make sure that the powdered sugar you use is made from unbleached sugar as bleached sugar may contain animal by-products.


Soften the vegan margarine.

Using an electric mixer, cream the sugar into the softened margarine. Then add the vanilla extract, soymilk, cocoa powder, and salt. Mix well. If it is too thick, add a very small amount of soymilk, and if it is too thin, add more powdered sugar. Continue to mix until the frosting is light and fluffy.

Frost your cake.

Next, refrigerate your cake for at least an hour to let the frosting set.

Note: To store, seal the cake in an airtight container and keep refrigerated.

Q. Is margarine vegan?

A. Most margarines contain trace amounts of milk solids, but there are a few brands that do not such as Land O'Lakes (unsalted) and Smart Balance Light Margarine. But, if you want to be sure that the margarine you are using is 100% vegan, check the ingredients on the label! Avoid margarines that contain whey, lactose, casein and caseinate, as these are dairy derivatives.

Q. Which brand is the best vegan margarine?

A. In my opinion, the best vegan margarine needs to be one that could be used for multiple purposes; from making a vegan cheese sauce thick and creamy, to use in baking a vegan chocolate cake, or just to spread on toast. For these reasons, my favorite vegan margarine is the Earth Balance brand. It is rich in flavour and quite buttery with a smooth consistency. It is 100% natural and rich in omega 3's, free of GMO's, hydrogenated oils, and artificial ingredients of any kind. And as an added bonus, it is reasonably priced.

Other alternatives to consider would be margarines made from 100% pure soybean oil. Soybean margarine is great for baking, but it doesn't have quite the same richness in flavour as Earth Balance when spread on a piece of toast.

Q. How can I use vegan margarine while baking?

A. You can use Earth Balance in any recipe that calls for vegan margarine, and in just about any recipe that calls for butter. Simply substitute the same amount of vegan margarine for the butter. Other margarine brands might not work as well in baking, and would say so right on the label, so take the time to read the label if you're unsure if your vegan margarine is suitable for baking.
